Falling number tester is a special instrument for measuring amylase activity in cereals, which can accurately judge the degree of germination damage of cereals. The principle of the method of Falling number tester: the suspension of cereal flour (such as wheat flour) is quickly simmered in a boiling water bath, and due to the difference in α-amylase activity, the starch of the simmer is liquefied to different degrees, and the degree of liquefaction is different. The falling speed of the stirrer in the simmer is different, and the height of the falling value indicates the difference of the corresponding α-amylase activity. The lower the falling value, the higher the activity of α-amylase.
